SUPER BOWL 2014!!!

Are you looking for something yummy yet still healthy for the Super Bowl this Sunday? Or maybe you're not a Super Bowl fan, but just want something yummy just because? 

Look no further! In my email today I just found a fun and amazing recipe for a 'California Burrito Bowl'! 

And if you've EVER had yummy sweet potatoes like this - you know EXACTLY what I'm talking about!! And if you haven't...my oh my, you are missing out!!

California Burrito Bowl

If you are not familiar with a California burrito, it is a regular burrito that contains french fries rather than the rice. This over-the-top dish is deliciously sinful. By ditching the flour tortilla, you’ll be able to Paleo-ify the burrito into a healthy meal.

Preparation time: 20 minutes
Cook time: 35 minutes
Serves: 2-4

Ingredients:
  • 2 medium sweet potatoes
  • 1 tablespoons olive oil
  • 1 tablespoon chili powder
  • ½ tablespoon cumin
  • ¼ teaspoon red pepper
  • ¼ teaspoon arrowroot powder
  • ¼ teaspoon turmeric
  • coconut oil cooking spray or avocado oil in an oil mister (you can also use regular extra virgin olive oil or coconut oil)
  • 1 pound chorizo turkey sausage (you can use regular turkey sausage or something equivalent also)
  • 1 avocado, mashed (if you read Did you Hear? Just Freeze It! this would be a great time to use those avocados, just take them out in time to thaw)
  • ¼ teaspoon lime juice
  • ½ white, yellow, or sweet onion, diced 
  • 3 tomatoes, diced
  • 2 tablespoons cilantro, chopped
  • ¼ cup pickled jalapeƱos
  • ½ cup red taco sauce (optional)
Directions
  1. Preheat the oven to 450 degrees. Peel the sweet potatoes. Cut them into ¼-inch fries.  
  2. Soak the fries in a large bowl of water for 1 hour. This will remove some of the starch. Drain them and pat dry with a paper towel. 
  3. In a large bowl, toss the fries with the olive oil, chili powder, cumin, red pepper, arrowroot powder, and turmeric. 
  4. Line two baking sheets with foil and spray with cooking spray of your choice (or simply spread some of the extra virgin olive oil or coconut oil on the foil)
  5. Spread the fries out in a single layer, making sure not to overcrowd them. Bake for 20 minutes, flip and cook an additional 10 minutes.
  6. While the fries bake, cook the turkey sausage in a large frying pan over medium-high heat for 7-10 minutes. Crumble the sausage with a spatula as it cooks. 
  7. Mash up the avocado and mix in the lime juice.
  8. When the fries come out of the oven, transfer them to a plate. 
  9. Top them with the sausage, onion, tomato, cilantro, avocado, and jalapeƱos. 
  10. If desired, drizzle red taco sauce on top.
